In todays post I bring you healthy options of my favourite deserts.
Paleo Jaffa Balls
• 8 Majoola Dates
• Zest of 1 Orange & Juice of 1/2
• 2 Tbs Organice Cacao Powder
• 1/2 cup Desiccated Coconut, plus some extra for rolling
• 1/2 Banana
• 1 cup Walnuts
• 1 cup Macadamia nuts
• 3 Tbs Chia seeds
Place all the ingredients into a food processor and process until smooth and the nuts have broken down to a crumble-like consistency. Take a table spoon of the mixture and roll into a walnut sized ball with your hands. Cover the ball with extra coconut. Repeat until all the consistence is used up. Place the rolled balls into the fridge for 20 min before serving.
Stuffed Apples (Tufahije)
This is a popular Bosnian desert. Tufahije were introduced to the people in Balkans during the Ottoman rule, although the dessert originates from Persia.
• 4 Fuji Apples (peeled and core taken out)
• 1/2 cup of coconut sugar
• 1/2 cup Almond meal
• 1/2 cup Walnut meal
• 1 Vanilla bean stick de-seeded
• 1/2 browning Banana
Place 1.5 litre of water and the coconut sugar into a pot and bring to a boil. Once boiling place the apples into the water for 5-10 minutes. You want the apple to be softened and not cooked through completely. Once ready take the apples out of the water and place on a plate to cool. In the mean time place the nut meals in mixing bowl and mix in with 2 Tbs of the sweet water. Mix in the vanilla and the banana until you have a smooth consistency.
Place the apple onto a platte and fill it with the nut filling.
• 8 Majoola Dates
• 1/4 cup Goji berries
• 4 Tbs Nut filling from above
Cut the date in half, throw the pip away and place 1/2 a Tbs of the filling into the date. Sprinkle with goji berries.
