Australia Day the Paleo Way - Savoury Edition

In case you didn’t hear it’s Australia day on the 26th of January.

I love any reason to do a cook up!

This year I thought I do something different but same. WHAT???

Yes it’s Australia Day the Paleo way.

In this post I bring you healthy options of my favourite fast foods each recipe serves 4.

Mushroom Sliders

Ingredients

Buns & Filling

  • 8 Large Mushrooms

  • 1 Spanish Onion

  • 4 Gherkins

  • 2 Tomatoes

  • 4 Butter Lettuce Leaves

  • 3 Baby Beetroot Grated

  • 2 Tbs Mayonaise

Beef Paddy

  • 500g Minced Meat

  • 2 Tbs Dried Oregano

  • 1 Tbs Dried Chilly (or more if you like it spicy)

  • 1Tbs Garlic Powder

  • 1 Brown Onion (finely diced)

  • Salt & Pepper to taste

Vegy Paddy

  • 2 Eggs

  • 2 Egg Whites

  • 1 Small Sweet Potato

  • 2 Medium Potatoes

  • 1 Medium Zucchini

  • 1/2 flat leaf Parsley

  • 1/2 Tbs chilly flakes

  • 3 Tbs Quinoa flower

  • 1 Tsp Baking powder

  • 2 Tsp Coconut butter

  • Salt & Petter to taste

Preparation

Beef Paddy - Mix all the ingredients for the in a large bowl. Once mixed well make palm sized paddies and set aside.

Veggy Paddy - Grate the potatoes & zucchini and place in a pot with water to cover. Once the water boils drain the potatoes & zucchini (really well). You may want to put it all onto a paper towel to a make sure all the water is gone. Now mix all the ingredients in a large bowl, the consistency you are looking for is like pancake better that has bits in it ;)

Heat a frying pan with the coconut butter. Once hot place the better in the frying pan the paddies should be the size of your palm. Cook on both sides until golden brown and set aside.

Sliders - Cut the mushroom stem out, slightly salt each up and place on the BBQ. Slice the Onion and sauté on the BBQ. The mushrooms are done when the cup is filled with water at which point you need to take it off the grill. The onions are done when they become translucent. Now all you need to do is stack.

Stacking order: Mushroom cup, butter lettuce, tomato, sliced gherkins, beef/veggie paddy, Mayo, onion, baby beetroot, Mushroom cup.

Paleo Hot Dog

Ingredients

  • 4 Beef Sausages (Organic Grass fed)

  • 1 Spanish Onion (sauté on the BBQ)

  • 4 Gherkins

  • 2 Coleslaw salad (Grated cabbage, grated carrot, salt, Olive oil, Apple cider Vinegar mixed)

  • 8 Cos Lettuce leaves

  • 3 Tbs Ajvar (Roasted Pepper Relish)

  • 2 Tbs Mustard

Preparation

Place the Sausages onto the BBQ until cooked through. To assemble place the Onions and Coleslaw and gherkins onto he two Cos Lettuce Leaves “buns”. Then place the Sausage and cover with Mustard and Ajvar

Sweat Potato Chips

Ingredients

  • 2 Large sweet Potatoes

  • Coconut olive spray

  • Himalayan Rock salt

Preparation

Heat the oven to 200. Slice the potatoes into thin slices place on a baking tray covered with baking paper. Spray the chips with Coconut oil spray and season. Place in the tray in the oven for 15 min or until the chips look golden on top. Turn them over and place back in the over for another few minutes until the chips are completely dehydrated.

Take out and serve.

Strawberry coolie

Ingredients

  • 2 Litre Mineral Water of your choice (non flavoured)

  • 1 Cup Frozen Strawberries

Preparation

Pour the water into a glass & drop a few frozen berries to cool the drink down instead of ice. Once the berries defrost your drink will have a slight ting of the strawberry flavour.
