Green Bean Stew - Buranija

Serves 4

500g top side beef cubed

500g green beans

4 medium potatoes

4 carrots

1 large onion

2 tbs flower (OR tapioca flower for GF)

1 can of crushed tomatoes

2 tsp Vegeta

1 tbs Olive oil

1/2 bunch of Parsley

Salt & Pepper to tast

Cooking Directions

Place the diced onion, Vegeta and olive oil into a deep pot andsauté the onions until they are translucent. Add the beef and brown it. Once the top layer of the beef is brown add 2 cups of water and bring the water to boil. Once boiling turn the heat down to low and cook the meet for the next hour until the meet is tender and falling apart.

You can reduce the cooking time if you use a pressure cooker.

Once the meat is cooked add the diced carrot and Potatoes and add more water, to cover the veggies.

Bring the water to boil again and cook for another 15 minutes. In the mean time wash the green beans and trim the ends. Add the green beans into the pot together with water to cover the veggies and the can of crushed tomatoes. Season with Salt and pepper and cook until the veggies are soft. Once all veggies are cooked take out 1 cup of the liquid from the pot into a small bowl and add flower. Mix this really well untill a thick mixture is formed. Pour the flower mixture back into the pot and stir well. Add chopped parsley and stir it in.

You can serve this with some garlic bread, but it is not necessary as the stew is quite filling with the potatoes.
